Usually Edelbrock conversions are pretty easy but you sound like you definitely have a problem. May I bloviate for a minute.
First, there are five separate fuel circuits on a AFB. There is idle, pump booster, crossover or transision, primary and secondary. If you had a two barrel, your cam and engine is set up for a really ...very stockish....fuel set up.
The timing should be set at 6 to 10 degrees static....and use the vacuum advance for another 10 to 12 degrees of full time advance. This should give your idle quality a boost for sure. For the idle mixture...starting with 1.5turns out on the mixture screws, go for either the most rpms or use a vacuum gauge to get the most vacuum then in 1/8turn. Adjust your rpms to the level that is desired with the mechanical idle screws.
Second...and this is probably bad news for you sense you are a stock engine, if you make over 15" of vacuum then the transition/crossover or "step-up" springs need to be changed to the silver ones. Why AFBs come with the orange ones is beyond me. Order either the silver springs or a calibration kit for your carb. The later preferable for jets and rod changes down the road. This should help you off throttle response...because it was too lean and probably bogged.
The pump position should be set to the middle hole position unless you can tell me something at throttle "tip-in" that's requiring more fuel. Leave it there........90% of the conversions I have done require this middle setting.
The primaries will depend on your cruising needs. Cruise for about 20 minutes at a constant speed requiring only primary metering. Secondaries are more difficult even tho with a stock motor these should come in and work perfectly. If it bogs, then again revert back to you calibration kit and nudge the secondaries up a tad.
The key is balance with these carbs. The more you fool with them the more you will like them.
